Most fruit and vegetables are sensitive to heat
but also to excessively low temperatures. They are best preserved through gentle cooling, typically between 5°C and 12°C, depending on the product.
Lowering the temperature soon after harvest substantially slows deterioration without damaging sensitive produce. It preserves freshness and quality during collection, storage and transport.
