Fish Requires a Different Level of Cold-Chain Control
Fish is not simply another product to be stored at a low temperature. It is among the most perishable foods in the entire supply chain.
For fresh fish, the objective is to bring the product itself to the temperature of melting ice – approximately 0°C – as soon as possible after landing or harvest, and to maintain that temperature without interruption until sale, processing or transport.
A cold room with air at 4°C is therefore not enough for a serious fish operation. The fish must be rapidly pulled down to near 0°C, normally through direct icing, ice slurry, chilled water or a combination of these methods. Ice should surround the fish, not merely sit somewhere in the same room.

Rapid Pull-Down Is Critical
The faster the fish is cooled, the slower the growth of bacteria, the activity of enzymes and the loss of texture, smell and market value.
The cooling load can be substantial. As a practical reference, cooling one kilogram of lean fish from 25°C to 0°C requires approximately 0.25 kg of melting ice under ideal conditions – before allowing for heat entering through boxes, doors, warm air and handling losses.
This means that a fish configuration requires:
- Higher initial cooling capacity than a fruit or vegetable store
- Sufficient ice or ice-slurry capacity at the landing or collection point
- Rapid loading and unloading procedures
- Hygienic, washable interior surfaces and drainage
- Continuous temperature monitoring
- Separation from vegetables, fruit and dry products
Chilled Fish and Frozen Fish
are completely different Applications
Chilled fresh fish is held close to 0°C, usually under ice. This maintains freshness for a limited number of days, depending on species, handling, hygiene and the condition of the fish at landing.
Frozen fish is a different operation. Long-term storage normally requires product temperatures of –18°C or lower, while proper freezing itself requires dedicated high-capacity freezing equipment with high opower consumption.
